Kawahagi Knife is specialized for fighting Primal enemies and enemies of the 
Fire or Ice Element that are Level 100-110+. It can be helpful against the Cthulhu, who is Primal and cannot be inflicted with 
Frostbite. This makes it possible to use alternative attacks to inflict 
Burn for additional Physical damage. Kawahagi Knife is also useful for Cavern of Torment: Floor 101-110 against The Sea Lord's Executioner, who is weak against Ice.

A kawahagi knife is a skinning knife used for kawahagi (皮剥ぎ filefish), a flat, sand-dwelling fish found in Japan's coastal areas.[1]
Based on DMFD's pattern of weapons sometimes being named after their creators, "Yoshimitsu" might be the name of the craftsman who forged this particular kawahagi knife.
The name "Yoshimitsu" might also be a reference to the Yoshimitsu Hamono cooking knife manufacturer. Yoshimitsu Hamono is a small blacksmith shop in southern Japan that mostly serves the area around Nagasaki.[2]
